There is nothing better than a fresh, warm chocolate chip cookie out of the oven. The problem with the chocolate chip cookie though is, it’s not the healthiest thing in the world for us. So in an effort to make myself feel better about my chocolate chip cookie vice I set out to find a healthy twist on it. Here are 2 healthy twists on the chocolate chip cookie that are sure to make the whole family happy and make you feel a little less guilty about eating 2 cookies in one sitting.
This is a recipe I adapted from Jessica Seinfeld’s book, Deceptively Delicious. My original intent was to make these for the kids adding a healthy twist to the normal chocolate chip cookie. Adding the chickpeas is great way to add protein and fiber. Plus I added the flax seed meal for a little extra health kick! They turned out so delicious that now I’m lucky just to get one cookies before my family eats them up.
1 cup brown sugar
¾ cup butter
2 egg whites
2 teaspoons vanilla extract
1 15 ounce can chickpeas (garbanzo beans), drained and rinsed
2 cups dark chocolate chips
1 ½ cups Gluten Free All purpose flour (or you can use regular)
¼ cup flax seed meal
½ cup old fashioned oats
1 teaspoon baking soda
¼ teaspoon sea salt
Preheat oven to 350 degrees. Coat a cookie sheet with parchment paper.
Beat sugar and butter (let soften) until smooth.
Beat in egg whites and vanilla, then add chickpeas and dark chocolate chips. Add flour, wheat germ, flax seed meal, oats, baking soda and salt.
Drop by tablespoonful onto baking sheet and press down on each cookie with a fork
Bake 11 to 13 min, until golden brown.
I found this recipe over at Adam Hart’s Power of Food and it’s so good! Between my wife and I one batch of these cookies only lasts a couple of days. The great thing about these cookies are they packed full of protein, fiber, healthy omegas and are gluten free. A good healthy alternative to an ordinary chocolate chip cookie!
1 cup of hemp seeds (I use Manitoba Harvest Organic Hemp Heart Seeds)
1/4 cup raw cane sugar
1 cup peanut butter
1/2 tsp baking soda
1/4 cup chocolate chips
Mix together all ingredients in a large bowl. Spoon out small ball size portions and flatten onto parchment paper with a fork. Cook in oven at 350 until golden brown, 10-15 minutes.
